- No bake best blueberry pie

- I got this receipt from a pal and don't know its origin. This method works
- just as well with pitted cherrys and other berries, just substituting them for
- the blueberries.

- 1 baked pie crust

- 3 cups fresh or frozen blueberries
- 1/3 cup sugar
- 1 tablespoon plus 2 teaspoons cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2/3 cup water
- 1/4 cup medium sherry
- 2 teaspoons lemon juice

- Spread the berries in the pie shell.

- Mix sugar, cornstarch, salt and cinnomon in a 4 cup glass measure. Stir in
- the water. Microwave uncovered on high stirring every minute until thickened
- and clear, 3 to 4 minutes.

- Stir in the sherry and lemon juice. Pon on the fruit in the pie shell.
- Refrigerate at least 2 hours.

- Serve with sour cream topping:
- Mix 1 cup sour cream, 2 tablespoons sugar and 1 teaspoon vanilla.
